Recipe for Easter bundt cake with mango

Easter is one of the most important holidays in Poland, which we traditionally celebrate with family at a festive breakfast. One of the inseparable elements of the holiday table is the Easter bundt cake, smelling of lemon, delicate and delicious. This classic pastry enjoys enormous popularity during Easter; below we present a recipe for an Easter bundt cake that you can easily prepare at home.

INGREDIENTS:

(all ingredients should be at room temperature)

• 200 g soft butter

• 120 g caster sugar

• 4 eggs

• 400 g mango puree (ready-made canned pulp)

• 500 g wheat flour

• 2 teaspoons baking powder

• Citrus zest from 2 limes,

1 lemon and 1 orange

• 1 egg white

• Powdered sugar (approx. 150 g powdered sugar)

• Pinch of salt

• Additionally: 30 g butter + 2 tablespoons flour for preparing the mold

PREPARATION

  • Place the butter and sugar in a mixer bowl and beat until fluffy and light.
  • Add the eggs one at a time, beating continuously.
  • Add the mango pulp, half of the citrus peels, mix with a whisk, then pour in the flour mixed with baking powder and combine until a uniform mass is obtained.
  • Preheat the oven to 170°C (top / bottom heating).
  • Grease the Bundt cake tin with butter, dust with flour and pour in the batter.
  • Bake the cake for approx. 55-60 minutes.
  • After baking, let it cool for approx. 20 minutes.
  • Prepare the royal icing.
  • Beat the egg white with salt until stiff peaks form.
  • Add powdered sugar to the beaten egg whites one tablespoon at a time until a bright, pliable icing is formed.
  • Pour the icing over the cake and sprinkle with citrus peels.
