Simple and proven recipe for homemade donuts

Ingredients:

  • 500 g wheat flour
  • 30 g fresh yeast
  • 250 ml warm milk
  • 50 g melted butter
  • 50 g sugar
  • 4 egg yolks
  • pinch of salt
  • oil for frying
  • jam or marmalade
  • powdered sugar for dusting

Preparation:

  1. Leaven: in a bowl, mix the yeast with a tablespoon of sugar and a bit of warm milk. Set aside for about 10-15 minutes until it starts working (foam should appear).
  2. Dough: in a second bowl, mix the flour with the rest of the sugar and salt. Then add the leaven, melted butter, eggs, and gradually pour in the rest of the warm milk. Mix until the ingredients combine, then knead the dough by hand or with a mixer with dough hooks until it is smooth and elastic (about 10 minutes). If the dough is too sticky, add a little flour.
  3. First rising: cover the bowl with the dough with a clean cloth and set aside in a warm place for about 1-1.5 hours, until the dough doubles in volume.
  4. Forming donuts: gently place the dough on a floured surface and roll it out to a thickness of about 1.5 cm. Use a glass or a special cutter to cut out circles. Shape the donuts, then cover them with a cotton cloth. Set aside for 30 minutes to rise slightly.
  5. Frying: in a deep pot, heat the oil to a temperature of about 175-180°C. Fry the donuts in batches, a few at a time, so as not to lower the oil temperature. Fry each donut for about 2-3 minutes on each side until they turn golden. Remove the ready donuts with a slotted spoon and drain excess fat on paper towels.
  6. Decoration: fill the still warm donuts with jam or marmalade using a cake decorator and sprinkle with powdered sugar using a kitchen strainer.

How to make donuts fluffy?

The key to fluffy donuts lies in a few simple secrets. Firstly, the temperature of the ingredients is important – all of them should be at room temperature before preparation - especially the eggs. The second secret is thorough kneading of the dough, which allows the gluten to develop and achieve the right texture. Last but not least is peace and patience during the dough's resting period – do not rush, let it rise beautifully.

How many donuts will half a kilogram of flour make?

From 0.5 kg of flour, you can get up to about 20 donuts, depending on their size. If you form smaller donuts, this number may be higher, while with larger ones, this number may be lower. The size of the donuts depends on preference – smaller ones can be about 5-6 cm in diameter after frying, while larger ones can be 7-8 cm or more. It is important to remember that donuts increase in size during frying, so it is worth forming them slightly smaller than the planned final size.

How many eggs for donuts?

To prepare donut dough from 0.5 kg of flour, 4 egg yolks are usually used. This amount of eggs provides the dough with the right structure and moisture, and also helps in achieving a light and fluffy interior of the donuts after frying. Eggs are an important ingredient in many donut recipes because they add richness of flavor, stickiness to the dough, and support the rising process.

How to make donuts with a ring?

Donuts with a characteristic light ring, also called a "collar", are a classic indicator of well-fried donuts. To achieve this impressive ring, they should be deep-fried in oil over moderate heat, so that the upper part of the donut, which protrudes above the oil, does not fry and forms a light ring. The consistency of the donut dough itself is also very important; it should be soft and slightly sticky, but at the same time elastic. Do not add too much flour, as dough that is too stiff can make it difficult for the ring to form.
