Quick plum cake with crumble

To prepare this cake, you need classic ingredients that everyone usually finds in their kitchen: flour, sugar, eggs, butter, baking powder, and fresh plums. First, a fluffy mass based on eggs, sugar, and melted fat is prepared, then dry ingredients are added and everything is gently mixed. The fruit is placed on top of the cake, and the whole thing is sprinkled with the previously prepared crumble.

During baking, the crumble becomes golden and crunchy, and the plums release juice, thanks to which the cake gains moisture and an intense flavor. It tastes best while still slightly warm, sprinkled with powdered sugar, although it can just as well be served cold.

Recipe

Ingredients

For the cake:

  • 2 cups of wheat flour
  • 3 eggs
  • 150 g sugar
  • 100 g melted butter or oil
  • 1 cup of natural yogurt or kefir
  • 2 teaspoons of baking powder
  • pinch of salt

For the crumble:

  • 100 g wheat flour
  • 70 g cold butter
  • 50 g sugar (white or cane)
  • optional: a teaspoon of cinnamon

Fruit:

  • approx. 500 g fresh or frozen plums (halves, pitted)

Step-by-step preparation

  1. Prepare the plums – wash them, remove the pits and cut into halves.
  2. Make the cake – in a bowl, beat the eggs with sugar until light and fluffy. Then add the yogurt and melted butter, and finally the flour mixed with baking powder and a pinch of salt. Mix everything gently.
  3. Prepare the crumble – combine the flour with sugar and cold butter, rubbing with your fingers until a lumpy consistency is obtained.
  4. Assembling the cake – pour the cake batter into a baking tray or springform pan, place the plum halves on top and sprinkle with crumble.
  5. Baking – put the cake in a preheated oven (180°C, top-bottom) and bake for about 40–45 minutes, until the crumble is golden brown and the center is dry in the toothpick test.
  6. Serving – after cooling, you can dust with powdered sugar and serve with a cup of coffee or tea.

Tips

  • If you are using frozen plums, do not thaw them before baking – simply coat them lightly in flour so they do not release excess juice.
  • It is worth adding a bit of cinnamon or vanilla to the crumble to give the cake an aromatic character.
  • If you want the cake to be fluffier, replace part of the wheat flour with cake flour or add a bit of pudding powder to the batter.
