Light raspberry-coconut dessert in a glass

Some moments encourage reaching for food that is light and cooked for as short a time as possible. There are days when I don't feel like turning on the hob or oven at all - then we eat cold soups, salads, and desserts are simple mixtures of fruit, yogurt and seeds. In August and September, raspberries, apricots and blackberries reign supreme - which not only look beautiful together, but taste wonderful in such a combination.

Ingredients for 2 servings

  • 200g raspberries
  • 2 tablespoons coconut sugar
  • 2 tablespoons chia seeds
  • 1/2 cup coconut milk
  • 200g natural coconut yogurt
  • a few drops of lemon juice
  • fruit for decoration: raspberries, blackberries, apricots, etc.

Pour coconut milk over the chia seeds and mix thoroughly. Set aside for 20 minutes for the seeds to swell - during this time, stir twice to prevent lumps from forming.

Mash the raspberries with coconut sugar and a few drops of lemon juice. Place them at the bottom of the glasses. Cover with a layer of swollen chia seeds, and then add the yogurt. Arrange the sliced and pitted fruit on top.
